This recipe is in honor of DJ Rude Obega and DJ Turn Up

I used to have this friend who loved to cook. He thought he was a chef.

He was also a very popular DJ.

He has some really sick beets. Unfortunately, when anybody would eat them, they would vomit.

He thought his Beat Salad was amazing. That’s why I said I used to have a friend who was a DJ.

Ingredients
2# Red Beats
2# Gold Beats
1/2 Julienned Red Onion, Pickled
1/2 Cup Candied Walnuts
1/2# Arugula
Balsamic Glaze

Method
Peel beats and cut down to a medium dice. Toss in oil, salt and pepper and bakes at 375 until browned and just cooked through. About 15-25 minutes. Lay out on a sheet tray and cool.

In your favorite pickling ju, pickle onions 24 hours ahead.

Cook 1/2 cup of Walnuts in 1/4 Cup of Water, 4 oz of Butter and 1/4 Cup of Brown sugar. Dash of cayenne. By the time the water has reduce and the sugar begins to candy, the nuts will be cooked. Lay out on a sheet tray and cool.

When nuts and beats have reached your desired temperature, toss together with remaining ingredients. Salt and pepper, lightly. Drizzle with balsamic glaze.

*4 oz Goat Cheese Creme Fraiche on the side
4 Cups Heavy Cream
1 Cup Goat Cheese
3/4 Cup Lemon Juice
Salt and White Pepper, to taste.
